Michael's Noodle Salad
Ingredients:
- 3/4 pound egg noodles
- 1 tablespoon sesame oil
- 3 eggs
- 1 cup Pilgrim's Pride chicken, cooked and shredded
- 1/2 cup celery, grated
- 1/2 cup cucumber, grated
- 1/2 cup carrots, grated
- 2 teaspoons sesame oil
- 1 tablespoon sesame paste
- 1/2 teaspoon salt
- 2 tablespoons soy sauce
- 2 teaspoons vinegar
- 2 cups chicken broth
Directions:
Cook noodles and drain. Mix in 1 tablespoon sesame oil and chill in the refrigerator. Beat eggs, fry in a pan and chop. Arrange eggs, chicken and vegetables on top of noodles. Pour on salad dressing when ready to serve. Mix all ingredients thoroughly. Serves 6. |
