Michael's Noodle Salad


Ingredients:
  • 3/4 pound egg noodles
  • 1 tablespoon sesame oil
  • 3 eggs
  • 1 cup Pilgrim's Pride chicken, cooked and shredded
  • 1/2 cup celery, grated
  • 1/2 cup cucumber, grated
  • 1/2 cup carrots, grated
  • 2 teaspoons sesame oil
  • 1 tablespoon sesame paste
  • 1/2 teaspoon salt
  • 2 tablespoons soy sauce
  • 2 teaspoons vinegar
  • 2 cups chicken broth

Directions:
Cook noodles and drain. Mix in 1 tablespoon sesame oil and chill in the refrigerator. Beat eggs, fry in a pan and chop. Arrange eggs, chicken and vegetables on top of noodles. Pour on salad dressing when ready to serve. Mix all ingredients thoroughly. Serves 6.
