Tri-Color Pasta Chicken Salad


Ingredients:
1 lb. Pilgrim's Pride de-boned chicken, cooked, cut in bite-sized pieces
1 avocado, peeled and cut in bite-sized pieces
1 tablespoon lemon juice
1 1/2 tsp. lemon pepper
salt to taste
1 cup cherry or grape tomatoes
4 green onions, chopped
1/2 cup mayonnaise
1/4 cup sour cream
1 lb. tri-color pasta swirls, cooked per directions and cooled


Directions:
In a medium mixing bowl, add the chicken and avocado. Stir gently together with the lemon juice, lemon pepper, and salt. Add the tomatoes and green onions. Toss lightly. In a separate large bowl, mix the mayonnaise, sour cream and cooked pasta together. Add the chicken, avocado, tomato, and green onion mixture to the pasta. Toss gently. Chill and serve.
