Simple Spinach Strata


American Egg Board

Ingredients:
  • 1 package (6 oz.) restaurant-style seasoned croutons
  • 8 EggsPlus eggs
  • 1/2 cup reduced-fat mayonnaise
  • 2 cups nonfat or low-fat milk
  • 2 tablespoons honey Dijon mustard
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 package (10 oz.) frozen chopped spinach, thawed and well-drained
  • 1 can (14 oz.) artichoke hearts, drained and chopped

Directions:
Evenly coat a 13x9-inch baking pan with cooking spray. Sprinkle croutons evenly over bottom. In a medium bowl, beat together eggs, mayonnaise, milk, mustard, salt if desired, and pepper until well blended. Stir in spinach and artichokes. Pour mixture over croutons; spread to distribute evenly. Cover with plastic wrap or foil and refrigerate several hours or overnight. When ready to bake, preheat oven to 3S0°F. Remove strata from refrigerator and let stand for 10 minutes while oven preheats. Uncover and bake until puffed and lightly browned at the edges and knife inserted in center comes out clean, about 30 to 35 minutes. Serve warm.
