Cajun Chicken with Caramelized Banana Rice

Ingredients:
  • 4 boneless, skinless chicken breast halves
  • 2 tablespoons paprika
  • 1/2 tablespoon garlic salt
  • 1 1/2 teaspoons oregano
  • 1 1/2 teaspoons thyme
  • 1/2 teaspoon pepper
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cardamom
  • 1/4 teaspoon cayenne
  • 2 bananas
  • 2 tablespoons butter
  • 2 tablespoons sugar
  • 1 cup rice, cooked according to package directions
  • 2 tablespoons sweetened coconut milk
  • 3 tablespoons chopped fresh mint

Directions:
In 13x9-inch lightly greased baking dish, place chicken breasts. In small bowl, mix together paprika, garlic salt, oregano, thyme, pepper, cumin, cardamom and cayenne pepper; rub evenly over chicken. Place chicken in 350 degree F. oven and bake about 30 minutes or until tender. In sauté pan over medium heat, place butter and sugar. Stir until sugar dissolves and begins to caramelize. Cut bananas in half lengthwise and add to pan, tossing to coat. Cut bananas into small pieces and mix with cooked rice. Stir in coconut milk and chopped mint. Place rice on serving dish and arrange chicken on top. Garnish with mint leaves. Makes 4 servings.
