Szechuan Spaghetti and Chicken Salad

Ingredients:
  • 4 boneless, skinless chicken breast halves
  • 1/2 teaspoon salt
  • 1/2 teaspoon five spice powder
  • 1/2 teaspoon crushed red pepper
  • 8 ounces thin spaghetti, broken in half and cooked according to package directions
  • 1 bag (12 oz.) frozen soy beans (edamame), cooked according to package directions
  • 1 bunch radishes, topped and sliced
  • 1 green onion, sliced
  • 1 carrot, shredded
  • 2 cups packaged baby spinach leaves

Directions:
prinkle chicken with salt, five spice powder and pepper. Place on broiler rack 6 inches from heat and cook about 6 minutes per side or until fork tender. Cut chicken into thin strips and place in small bowl. In large bowl, place cooked and drained spaghetti, cooked and drained soy beans, radishes, green onion, carrot and spinach leaves. Reserve 2 tablespoons of the Vinaigrette and toss remainder with spaghetti mixture; remove to serving platter. Drizzle reserved Vinaigrette over chicken and arrange chicken on top of pasta mixture. Garnish with mint sprigs and chopped peanuts. Makes 4 servings.

Vinaigrette: In blender container, place 1/4 cup hoisin sauce, 1/4 cup rice wine vinegar, 1/4 cup chicken broth, 2 tablespoons sesame oil, 1 tablespoon soy sauce, 2 tablespoons chopped mint leaves and 1 teaspoon chili garlic sauce. Blend until smooth.
