Mediterranean Chicken Wrap
Pilgrim's Pride
Ingredients:
- 5 fillet (3 oz) pieces Pilgrim’s Pride Eat Well Stay Healthy Key Lime Flavored Chicken Breast Fillets
- 5 wheat flatbread
- 1/2 lime
- 3 cups romaine lettuce, shredded
- 3 tomatoes, thin sliced
- 1 cup low fat mayonnaise
- 2 chipotle peppers, seeded and chopped
Directions:
- Preheat oven to 400°F
- Heat chicken per package instructions
- Cut each Key Lime breast into 4 lengthwise strips
- Reheat flatbread in oven for about 3 minutes.
- Spread 1/2 cup lettuce over the flatbread
- Add 4-6 chicken strips and tomato slices
- Spoon a dollop of Chipotle mayonnaise in the center and serve.
Chipotle Mayonnaise
- Mix chopped chipotle pepper, 1 tsp lime juice and mayonnaise and mix well.
