Mediterranean Chicken Wrap


Pilgrim's Pride

Ingredients:
  • 5 fillet (3 oz) pieces Pilgrim’s Pride Eat Well Stay Healthy Key Lime Flavored Chicken Breast Fillets
  • 5 wheat flatbread
  • 1/2 lime
  • 3 cups romaine lettuce, shredded
  • 3 tomatoes, thin sliced
  • 1 cup low fat mayonnaise
  • 2 chipotle peppers, seeded and chopped

Directions:
  • Preheat oven to 400°F
  • Heat chicken per package instructions
  • Cut each Key Lime breast into 4 lengthwise strips
  • Reheat flatbread in oven for about 3 minutes.
  • Spread 1/2 cup lettuce over the flatbread
  • Add 4-6 chicken strips and tomato slices
  • Spoon a dollop of Chipotle mayonnaise in the center and serve.
Chipotle Mayonnaise
  • Mix chopped chipotle pepper, 1 tsp lime juice and mayonnaise and mix well.
