Thai Chicken Noodle Salad


Pilgrim's Pride

Ingredients:
1 package of Pilgrim’s Pride Eat Well Stay Healthy Szechwan Breast Tenders
1 box of Thai Kitchen Stir-Fry Rice Noodles (14 oz.)
2 carrots, cut into fine strips
4 green onions diagonally sliced
1 red bell pepper seeded and cut into thin strips
4 tablespoons cilantro leaves, chopped

For Dressing

2 tablespoons mint leaves, chopped
1/2 cup lime juice
1/2 cup fish Sauce
2 tablespoons honey


Directions:

  • Prepare chicken and Thai noodles per package instructions.
  • For dressing, mix lime juice, fish sauce and honey until well blended.
  • Add dressing and toss noodles, pepper, carrot, green onions, cilantro and mint until mixed.
  • Top with chicken pieces and serve cold or hot.
