Mexican Pasta Salad

Easy mexican salad
Ingredients:
  • 1 lb. Pilgrim's Pride cooked diced chicken
  • 16 ounce package pasta spirals
  • 1 red onion, chopped
  • 10 ounces frozen corn, cooked
  • 1 green pepper, chopped
  • 1 jicama, peeled & chopped
  • 1 small can sliced black olives, drained
  • 1 tomato, chopped
  • 2 avocados, peeled & sliced
  • 1 10 ounce jar picante sauce
  • 1 cup cheddar cheese cubes

Directions:
Mix all ingredients in a large bowl except picante and cheese. Chill. Add the picante sauce about 30 minutes before serving. Top with cheese cubes.

To make ahead, combine all ingredients except avocadoes, picante sauce and cheese. Add just before serving.

Serves 8-10.
