Bless Your Heart's Low-Fat Tortilla Soup
Healthy, low-fat tortilla soup
Ingredients:
4 (14.5-oz.) cans of diced tomatoes
2 (4.5-oz.) cans of diced green chilies
3 quarts water
1 Tablespoon chili powder
1 1/2 teaspoons cumin
1 1/2 teaspoons salt
1 1/2 teaspoons garlic powder
1 cup chopped onions
2 cups chicken broth
1 1/2 quarts diced cooked Pilgrim's Pride boneless skinless breast
Directions:
In a large kettle, combine all ingredients. Cook over medium heat until hot. Cover and simmer for about 1 hour. Serve with tortilla strips or tortilla chips, and top with low-fat mozzarella cheese.
