Bless Your Heart's Low-Fat Tortilla Soup

Healthy, low-fat tortilla soup
Ingredients:
  • 4 (14.5-oz.) cans of diced tomatoes
  • 2 (4.5-oz.) cans of diced green chilies
  • 3 quarts water
  • 1 Tablespoon chili powder
  • 1 1/2 teaspoons cumin
  • 1 1/2 teaspoons salt
  • 1 1/2 teaspoons garlic powder
  • 1 cup chopped onions
  • 2 cups chicken broth
  • 1 1/2 quarts diced cooked Pilgrim's Pride boneless skinless breast

Directions:
In a large kettle, combine all ingredients. Cook over medium heat until hot. Cover and simmer for about 1 hour. Serve with tortilla strips or tortilla chips, and top with low-fat mozzarella cheese.
