South of the Border Chicken Tacos

Spicy chicken tacos
Ingredients:
  • 4 boneless Pilgrim's Pride chicken breasts, thawed
  • 1 package chicken taco seasoning
  • 1 cup water
  • 1 small can chopped chili peppers
  • 6 oz. Monterrey Jack cheese, shredded
  • 6 oz. sharp Cheddar cheese, shredded
  • 12 flour tortillas
  • 1 head, small green leaf lettuce, shredded
  • 1 large tomato, diced

Directions:
Boil the chicken breasts in 6 cups of water until tender and thoroughly cooked. Remove breasts and cool. Shred chicken breasts using two forks. Place chicken in a skillet, add water and taco seasoning. Bring to a boil and simmer for 5 minutes. Add drained chili peppers. Remove from heat. Heat a large skillet or griddle. Spray lightly with cooking oil. Heat tortillas until browned. Fill with chicken mixture, cheese, lettuce and tomato. Enjoy. Serve with fresh guacamole or pico de gallo.
